Ephemera began as a series of small pop-up dinners in Colorado Springs, Colorado by Chefs Ian Dedrickson and Adam Ridens, and creative director Jasmine Dillavou in 2018. After several years, Ephemera found an official home inside of CO.A.T.I., a new event space and food hall in the budding downtown area of Colorado Springs. Ephemera offers a constantly evolving tasting menu accompanied by several pairing options in an unsuspecting hideaway space in a lively event hall. Since opening in 2020, Ephemera has gained several accolades, including 2023 Best Overall Restaurant, Best Fine Dining, and two times Bronze Best Chef for Chef De Cuisine Nora Dillon. With a Table 22 meal, participants will receive Four Courses of seasonally crafted dishes, prepared for easy at-home preparation and the option of sommelier-curated wine pairings.
