We’ve been making cheese in the mountains of western Maryland for over 20 years, and if there’s one thing we’ve learned, it’s that good cheese brings people together. This club is our way of sharing that spirit — the daily work, the seasonal finds, and the joy we can’t stop talking about.

Each month, you’ll get a rotating selection of our award-winning cheeses and a few special gems from American producers we admire, plus thoughtful pairings like crackers, jam, pickles, or chocolate. Every box is hand-packed by our mongers with what’s tasting best right now — just like we’d recommend in the shop.

FireFly Farms began in the hills of Accident, Maryland, built on a belief that good food can do good in the world. Since 2000, founders Mike Koch and Pablo Solanet have grown a business rooted in care—for animals, land, and people. They source milk from 13 to 17 small farms nearby, many of them Amish, and pay fair prices to support long-term partnerships that sustain both the farms and the region.

Inside the creamery, everything starts with fresh goat milk. The result is cheese with a clean, bright flavor and a texture that’s soft and generous. People who think they don’t like goat cheese tend to change their minds.

But the work doesn’t end at the creamery door. FireFly is committed to low-impact farming, healthy soil, and a strong local food economy. They’ve built a model where nothing goes to waste and every part of the process reflects respect—for the animals, for the environment, and for the people who make and eat the cheese.
