We rely on regionally sourced, ethically raised, clean, quality meats. Working directly with family farms and receiving whole animals gives us the benefit of preparing custom cuts, as well as dry aging, and several bone-in cuts that have fallen behind at your everyday supermarket.
We take pride in our dry-aged beef, heritage pork, fresh poultry, and more. We love talking about what’s in the case, our cooler, or what you are looking to prepare.

At Lady Jaye Restaurant and Smokehouse, were not just smoking the competition, were smoking everything we can get our hands on. From meats, to whiskey to marijwell, well leave it there. We serve a custom sustainable farm-to-table menu that changes from week to week. Our smoker, we call him Cletus, is a big ole boy sitting right around 2,500 pounds. He's made from an old air tank that was from an archery factory in Walla, Walla. We gave him a hell of a makeover and now he's the star of the Lady Jaye show. Cletus smokes our meats with Applewood that we get from a local apple farmer. Applewood burns longer and slower to give it a mellow smoked flavor. Visit us at Lady Jaye in West Seattle and reserve a table indoor or on the outdoor patio. Stop by and browse our local butcher shop featuring Wagyu beef or stop by the bar and say Hi! when we are open. We'd love to see ya!
