We’re a family-run meat shop based in Lakeway, TX, working with local ranchers to deliver premium, Hill Country Texas beef—always hand-cut and packed with flavor. Our 3 partner ranches are all located within 100 miles of our shop. The boxes in this offering feature Angus cuts raised and processed in Mason, TX. The herd is on just under 10k acres and is grass fed (when mother nature allows*), finished with leftover whiskey mash from local distilleries and then dry aged for up 21 days. 
We’ve teamed up with East Austin Wine Co. to pair our ranch direct beef with small-production wines from Texas, the Pacific Northwest, and Europe. Each month, you’ll get a curated selection of meat and wine—plus notes from the team on what they’re loving and why.
