The Experience
Beer has always been a shared experience at The Publican. We specialize in big pours served at our long, communal tables, and stories passed between sips. This club gives us a new way to keep that going at home. We’re pulling in exceptional and interesting beers from friends and brewers we trust — stuff with character that you probably won’t find at the corner store.

This is also a chance to drink alongside the guy behind the list. Aaron Peck, Certified Cicerone® and our in-house beer brain for nearly a decade, has shaped what beer looks like at The Publican. Each month, he’ll pack the box with his picks, plus tasting notes, brewer backstories, and the kind of details you’d only get if you were sitting at the bar. He’s excited to share the things he’s passionate about, and it shows.

The club reflects how we drink here: seasonal, thoughtful, maybe a little unexpected. You might get a saison that tastes like summer in Belgium, or a hoppy Chicago collab that’s never been tapped anywhere else. Every month brings beers we’re excited to open, and even more excited to talk about.

Since opening, The Publican has always been about good beer, good pork, and a damn good time. It’s Chef Paul Kahan and his team’s version of a European beer hall — loud in the best way, with long tables, farmhouse fare, and a deep care about where the food and drinks come from. The super seasonal menu is built around trusted farms, with seafood and heritage pork front and center. To match, the beer list is wide-ranging and thoughtful, showcasing rare Belgian styles, Chicago-brewed collabs, and farmhouse ales that enhance what’s on the plate.
