Fabian Daviaux is a multigenerational farmer and vigneron in the village of Chavost, leading the small Champagne cooperative of the village, Champagne Chavost.
Champagne Chavost is not a typical cooperative. The wines at Champagne Chavost are vinified entirely without the addition of sulfur or other additives, a rare feat in Champagne. The 'Eureka' bottling is half Chardonnay, half Meunier, from a 5-hectare north-facing clay and limestone vineyard. All farming is certified organic. No sugar is added. The result is a mineral, laser-like expression of Champagne.
